Bagels – delicious, versatile

In the village where we live, there is a magical restaurant called, Bread & Chocolate.  They make the best bagels I have ever had in my life.  They are vegan and come in garlic and seedy blends.  We often walk down and pick up a bag full of fresh bagels because we know we can make marvelous lunches, dinners as well as breakfasts with them.

Recent studies have determined that consuming as little as one-half teaspoon of cinnamon each day may reduce blood sugar, cholesterol, and triglyceride levels by as much as 20% in Type II diabetes patients who are not taking insulin. It is used to treat nausea, flatulence, and is also used to treat diarrhoea.  A helpful remedy for those developing a cough, accompanied by frequent spitting of phlegm,  is chewing and swallowing a very small pinch of powdered cinnamon. This remedy can also help people with cold feet and hands, especially at night.

Baba Ghanouj, Bruschetta, Polenta FEAST

Last night we had some homemade foccacia topped with garlic and rosemary, served with baba bhanouj, bruschetta and polenta with homemade sundried tomatoes, garlic and pine nuts.  It was a lovely and tasty spread.

Soup Heavenly Soup

Today is a rainy, cool day here in the jungle.  It makes me think that it is a good day for soup.  But, really, any day is a good day for soup.  Some people tell me that they do not like soup.  Maybe that comes from eating soup out of a can or ramen package.  If I ate those, I would not particularly like soup either. **  I like homemade soup – the kind I smell cooking and can’t wait to sample.  Or raw veggie soup that provides energy and a little kick.

MSG – a terrible additive

One of the more dangerous additives to most foods on the grocery store shelves is Monosodium Glutamate or MSG.  Actually this “flavor enhancer” makes otherwise bad food taste, well, okay – to the average consumer.   But, the side effects of this additive are potentially life threatening. (more…)

This meal is truly a blessing.  I missed the wonderful vegan food we cook at our home in Costa Rica.  I did enjoy some nice vegan burritos while traveling.  But, today, with my daughter back from India and myself back from the Pacific Northeast, we all agreed that we must have our wonderful vegan eggless benediction!

Back from my travels

I have been in the States.  It was a great visit with my son and granddaughter.  It also reminded me how lucky I am to live in Costa Rica and to eat such fresh, healthy foods, walk almost everywhere or ride my bike and to live simply.
