Vegan Pad Thai Noodles – Gluten Free
One of my favorite dishes to cook these days is Pad Thai Noodles. These noodles are so versatile and delicious, no matter how I prepare them. They are also wonderful left over, as they maintain their consistency.
The night before last, I prepared Pad Thai noodles, by soaking them for at least 30 minutes in cold water. I then boiled them for about 3 minutes. I drained and then added my veggie sauce which consisted of sauteed:
broccoli cut small, shredded carrots, ginger, garlic and turmeric blended in the food processor, tofu shredded, chopped zucchini, sesame oil, chili oil, Braggs Liquid Amino Acids, splash of tamari
It was truly delicious and enjoyed by all. Another way I could have prepared this is to stir fly the noodles in the veggie sauce, after soaking, eliminating the need for boiling.
You can add any vegetable you like to this. You can season with peanut sauce, teriyaki sauce, lemon sauce, tahini sauce, etc. It can be spicy or temperate. You can serve this cold or hot, depending on the weather. The noodles are also excellent in soups and salads.

Looks wonderful! I hope you are enjoying your new home. I would love to visit your new business the next time we are in CR – we loved Puerto Viejo so much that we are planning a 3 month stay there next year.
