Vegan Spinach Enchilada

There is absolutely no reason that as a vegan you cannot enjoy some of your favorite non-vegan foods, changed but even more delicious.  This is a vegan spinach, open-faced enchilada.

I adore Tex-Mex food, but enjoy it even more using vegan variations.  I eat enchiladas, tostadas, tamales, rice and beans, etc.  All super healthy, filling and delicious.

For this meal, I slightly brown a large, homemade corn tortilla.  I crumble some tofu and cook it for a bit.  I add lots of spinach, garlic, a sprinkle of nutritional yeast and saute.  I then add green tomatillo salsa, (a delicious Mexican green salsa made with roasted tomatillos, chile peppers, lime juice, cilantro, and onion).

I put this on top of the corn tortilla and serve.  The flavors are out of this world and it is just the right amount of spicy.
