Tempeh Potato Casserole
Yes, casseroles are in. But, only if they are healthy. This tempeh, potato casserole with spinach and mushroom miso gravy is all that.

Sometimes we long for the traditional flavors of carnivorous memories. My kids wanted something resembling celebrations of the long past. So, I created this casserole, which was trumpeted as a success by all.
I first steamed and browned tempeh. I then put it in a casserole dish and covered it with boiled and riced potatoes. (You use a potato ricer for this, or you can used mashed potatoes.) I then put a layer of fresh spinach and covered with mushroom, miso gravy. (That recipe is on this web site.)
I put in the oven for 20 – 30 minutes and then we feasted. We decided that I should have added some pecans or walnuts in the dish. And, cranberry sauce on the side would have been perfect. We had Raw Vegan Cran Apple pie on the side, so it was perfect.
