Raw Vegan Cran Apple Pie
My family had our harvest festival yesterday. We bought all kinds of goodies at the farmer’s market and whipped up a simple, yet delicious, feast. The dessert was the real winner Everyone loved it. My kids said things like, “Mom you need to make this every day.”
One guest did not want any pie, thinking it was full of fat. I told her it was not. She said, “A pie is a pie.” I said, “No, this is a raw, vegan pie – quite different.” She took a small taste and then asked for a piece!


This pie is very easy to make. First you make the crust…
2 cups sliced raw almonds plus 2 cups raw unsweetened figs
Put them in the food process and pulse until mixed well. Press into pie plate.
Then you slice green apples and lay on top of the crust. I peeled and sliced 4 large green apples
Then you make the filling. I used two more apples and a bag of fresh cranberries. I put this into the food processor with about 3/4 cup of agave syrup. I pulsed until smooth and then poured on top of the apples. I sprinkled slivered almonds on top and put in the refrigerator.
I pulled it out after dinner, cut and served it. The color was amazing and the flavor was sweet, crisp, tangy and muy rico!
