Slow Down and Savor The Moment
I have been busy this week, running my lodging establishment in Costa Rica. I realized yesterday that I was too busy to prepare good food for myself and to enjoy the moment. I told myself to slow down and savor the moment.

This morning, I got up and made a delicious tahini dip and cut up carrots and celery. It made a very healthy and enjoyable breakfast. To make this, I put a cup of tahini, several garlic cloves, apple cider vinegar, fresh squeezed lime juice, Braggs Liquid Amino Acids into a bowl and used my Kitchen Aid hand blender to mix it all up.
For lunch, I had a salad at a restaurant in town – no cheese, no egg, please add avocado – which was nice and crunchy. And, for dinner we are making spring rolls with fresh ginger, fresh mint leaves, garlic, carrot, marinated tofu and sauces for dipping.
Sometimes I get too busy to think about myself and my dietary needs and wind up eating popcorn or chips and salsa for meals. It is okay, occasionally, but not good for all the time. Fortunately, we have no fast food where we live, so eating that kind of stuff is not an option.
I am reminded to slow down and take care of myself. Eating good, healthy, fresh food is important, as is getting my exercise every day. Life can carry us away if we let it.
